Food Safe Questions

Use the attached  questions to guide your thinking about Food Safety.

You should pay particular attention to bacteria and the conditions you can change to prevent them from growing.  Remember, a kitchen is CLEAN; it is not sanitized.  We need to control the conditions under which bacteria flourish in order to prevent them from growing.  What are 4 conditions bacteria thrive under?  Which of these conditions is easiest for us to change consistently in the kitchen?

Expain what is meant by the danger zone and what temperatures are included in this zone?

Explain why it is not safe to eat food that has been heated thoroughly (above 70 C.) if it has been sitting out in the danzer zone for more than 2 hours.
